Simple Recipe: Chili Lime Kale Chips

When that afternoon savory snack craving hits (it happens to the best of us), you’ll want these crispy kale chips nearby. Trust us. These are one of our all-time favorite snacks, equally for their amazing flavor and their nutritional punch. Kale is full of vitamin K, which is essential for bone health and healthy blood clotting. Kale is also loaded with iron, calcium, Vitamin C and omega-3 fatty acids. Bring on the kale.

Pro tip: make these in advance so that when a craving hits, you won’t find yourself eye-to-eye with the vending machine.

Crispy Kale Chips with Chili and Lime

Ingredients

2 bunches of kale, cut into bite-size pieces, washed and dried thoroughly
2 tablespoons olive oil
Finely grated lime zest from 2 limes
Sea salt, to taste
Chili powder, to taste
1 tsp grated lime zest

Instructions

  1. Preheat oven to 300 degrees. Line two baking sheets with parchment paper.
  2. Make sure your kale is completely dry before tossing it with olive oil and salt. Massage oil into the kale chips before spreading out out across the two baking sheets.
  3. Bake the kale chips for 10 minutes, rotate the pan and bake for another 10-15 minutes. The kale should be crisp and lightly browned.
  4. Cool for at least 3 minutes before sprinkling with lime zest, sea salt and chili powder.
