Snowball Cookies

These snowball cookies are the perfect holiday gift. They are made with just five simple and clean ingredients. As a bonus, these treats are diabetic friendly and gluten free. This is definitely the gift that keeps on giving.

1 cup Medjool dates pitted, soaked in hot water for 10-15 minutes
½ cup shredded coconut divided
½ cup Almonds
1 Tbsp coconut oil
1 tsp vanilla extract
1/2 tsp almond or orange extract (optional)
In a small microwave proof bowl/cup, melt coconut oil ( approx 20 seconds).
In a food processor ( or blender) , pulse the dates to create a thick paste. Add almonds, 1/4 cup shredded coconut, melted coconut oil and vanilla extract (and orange or almond if using). Pulse again to incorporate and create a paste/uniform batter. Transfer paste/batter to a medium bowl.
Place remaining shredded coconut (1/4 cup) in a low shallow bowl or plate.
Using a spoon, scoop approx. 1 to 1 1/2 teaspoons of paste and roll between hands to create a ball. Roll the ball in shredded coconut (pressing lightly) until well covered. Place on a clean plate, repeat until all paste/batter has been formed into balls.
Refrigerate until firm ( at least 15 minutes)
