Spring Salad Inspiration

With the first day of Spring just a week away, it’s only natural to start craving more greens. Shifting away from winter’s heartier dishes by eating more leafy greens and non-starchy veggies is a great way to start rejuvenating! 😌🌱 

This simple side salad is a light and refreshing way to add some extra crunch to any meal. Arugula and endive make the ultimate liver-friendly base to support natural detox. Top it off with skin-strengthening walnuts and circulation-boosting pomegranate seeds, and your body will be buzzing with the bees. 

 

The Harvest Salad

  • 3 endive heads
  • 1/2 bag arugula
  • 1/2 cup pomegranate seeds
  • 1/2 cup toasted walnuts
  • 1-2 tsp. extra virgin olive oil
  • Salt & pepper to taste

Toss all ingredients together in a bowl. Enjoy!
