Recipe We Love: Food52's Roasted Cauliflower with Cumin and Cilantro

A simple trick to freshen up the veggies on your place is by spicing - quite literally! Switching up your herbs, spices and seasoning when  marinating your veg of choice is such an easy way to make a dish even more tasty. A few of our favorite roasting spices include: cumin, garlic powder, rosemary, thyme, oregano, cayenne pepper, and of course, sea salt and black pepper.

We've adapted one of our fave recipes from Food52 for a fresh take on the good old cauliflower - enjoy!

Roasted Cauliflower with Cumin and Cilantro
Adapted from Food52

Ingredients

1 head cauliflower, cut into florets
2 tbsp avocado oil
Salt and pepper, to taste
2 tbsp lemon juice
1 tsp ground cumin
1-2 tbsp roughly chopped cilantro

Instructions

  1. Preheat oven to 425˚ F. 
  2. Toss the florets in the olive oil. Place them on baking sheet, flat side down. Season with a few good pinches of salt and black pepper to taste. Place in the preheated oven and allow to roast for about 30 minutes, or until lightly browned, turning the pan and tossing the florets after 10 and 20 minutes for even cooking.
  3. After about 30 minutes, the florets should be slightly caramelized. Remove them from the oven, and top with lemon juice and cumin. Return them to the oven for about 10 minutes, until just tender. Remove from the oven, sprinkle with chopped cilantro, and serve warm.
