Simple Post-Thanksgiving Massaged Kale Salad Recipe

With Thanksgiving behind us and a month of holiday parties, office treats and travel ahead, a light and refreshing kale salad can be a welcome reprieve. This simple massaged kale salad is packed with fiber as well as healthy fats and will keep you full and satisfied. 

Because this recipe calls for a sturdier leaf like kale, this salad will keep in the fridge for 3-4 days. So make this ahead of time and you’ll have a big bowl of greens waiting for you all week long. 

Massaged Kale Salad
Serves: ~4


Ingredients:
1-2 bunches kale, washed, de-stemmed, and shredded
1 avocado, chopped
1/2 lemon, juiced
salt and pepper, to taste
1/4 red onion, diced 
1/2 cup cherry tomatoes, halved 
1/4 cup almonds, chopped 

Directions:

  1. Place kale, avocado, lemon juice, salt and pepper in a large mixing bowl. Here's the fun part. Massage the ingredients together with your hands until the kale is softened and fully coated in avocado, about 2 minutes.
  2. Mix in red onion, cherry tomatoes, and almonds. Feel free to toss in other toppings too.  To make it a meal, toss in a bit of cooked quinoa and black beans.
