Summer Peach Salad

This simple summer salad is a reminder to enjoy seasonal ingredients at their very best. The combination of ripe and juicy peaches, fresh spinach, avocado, crunchy red onion, and almonds creates a perfect light and fresh salad recipe. Drizzle with some homemade balsamic vinaigrette and enjoy.


4-6 cups organic spinach
2 large peaches, sliced
1 avocado, diced
1/2 small red onion, very thinly sliced
1/4 cup sliced toasted almonds
For the dressing:
3 tablespoons balsamic vinegar
1 tablespoons extra virgin olive oil
1 garlic clove
1/2 teaspoon dijon mustard
Salt and pepper, to taste
1. Blend together the balsamic vinaigrette: balsamic, olive oil, garlic, dijon mustard and salt and pepper.
2. In a large bowl, add the spinach. Drizzle with balsamic vinaigrette and toss together to combine. Top salad with peach slices, diced avocado, red onion, and toasted almonds. Toss very gently again. Serve immediately.
3. Enjoy.
